Pyrenees ham & herb cheese samosa

4 slices of Sarrade Pyrenees ham 
200g of cheese cream (Boursin/Tartare style) 
½ cucumber 
½ lemon 
Caramel vinegar 


Zest the lemon and squeeze the juice 
Peel the cucumber and finely cube (½ cm)  
Mix everything with the cheese                                                                                                                                                           
Place a slice of ham vertically in front of you  
Fold and fold again from the sides.  
Place 1 tbsp of cheese at the top staying away from the edges 
Then fold up from the bottom of the slice of ham to form a triangle (refer to the initial folding of a samosa). 
Season with caramel vinegar.  
*Serve on a bed of mixed salad
